Wembley Pink Gin

50 ml

2 raspberries

2 strawberries

1 thyme sprig

Lemon juice

10 ml

Simple syrup

15 ml

Top with sparkling wine

Preparation

Muddle berries and thyme in a shaker.
Add other ingredients (except sparkling wine) with ice.
Shake well and fine strain into a coupe glass.
Top with sparkling wine.
Garnish with a raspberry.
